Ingredients
  

Main ingredients
  • 3 cups shredded chicken (rotisserie or leftover) Use pre-cooked chicken for quick preparation.
  • 2 cans white beans Mash a third of the beans for a creamier texture.
  • 4 cups chicken broth Ensure it's gluten-free if needed.
  • 1 can green chiles
  • 1 cup corn Fresh corn is best in summer; frozen works fine.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons cumin
  • 1 teaspoon chili powder Adjust to taste.
  • 4 ounces cream cheese Use lighter cream cheese if desired.
  • 1 cup sour cream Stir in at the end.
  • 1 Juice of lime Always use fresh lime.

Method
 

Preparation
  1. Sauté diced onions and minced garlic in oil until fragrant.
  2. Add the shredded chicken to the pot, followed by the white beans, green chiles, corn, and chicken broth.
Cooking
  1. Let the mixture bubble gently for about 20-30 minutes, stirring occasionally.
  2. Once thickened, stir in cream cheese and sour cream.
  3. Taste and add more salt or lime juice if needed.
Serving
  1. Serve hot, garnished with additional lime or cilantro if desired.

Notes

You can make this recipe in a crockpot by adding all ingredients except the cream cheese and sour cream, cooking on low for 5-6 hours or high for 2-3 hours. Add dairy in the last 30 minutes.
