Preparation
- In a medium bowl, mix the flour, sugar, baking powder, and salt.
- In another bowl, whisk the milk, egg, melted butter, ube extract, and vanilla. If using ube halaya, whisk it in too.
- Pour the wet into the dry and stir until you do not see dry flour, with a few small lumps remaining.
Cooking
- Heat a nonstick pan or griddle on medium or medium low. Lightly butter it.
- Scoop batter (about 1/4 cup per pancake). Cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes.
- Flip and cook for another 1 to 2 minutes.
- Serve right away with your choice of toppings.
Notes
Leftovers are amazing; let them cool, stack with parchment paper between, and freeze. Reheat in a toaster or warm pan.
