Ingredients
  

Cake Ingredients
  • 2 cups All purpose flour Spoon into measuring cup and level off.
  • 1 tbsp Baking powder
  • 1 pinch Salt
  • 1 cup Sugar
  • 3 large Eggs Beaten with sugar.
  • 1 cup Milk Whole milk preferred.
  • 1/2 cup Neutral oil or softened butter Oil keeps it moist.
  • 1 tsp Ube extract Start small, adjust to taste.
  • 1 tsp Vanilla extract Enhances flavor.
  • 1 drop Violet or purple food color Optional for a bolder color.
Frosting Ingredients
  • 1 batch Cream cheese frosting or whipped buttercream Keep it not too sweet.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease your pans and line the bottoms with parchment if possible.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat the eggs and sugar until lighter in color. Then add milk, oil or butter, vanilla, and ube extract.
  4. Combine wet and dry ingredients and stir until just combined. Do not overmix. Add food color if desired.
Baking
  1. Divide the batter between the two cake pans.
  2. Bake for 25 to 35 minutes, or until a toothpick comes out clean.
Cooling and Frosting
  1. Let the layers cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  2. Once cooled, level the tops if needed. Frost between layers and on top and sides as desired.

Notes

Measure flour gently to avoid a dry cake. Chill the cake layers for easier stacking. Check the cake a few minutes early to prevent overbaking.
