- Grate the cucumber and squeeze out as much liquid as possible using your hands or a clean kitchen towel.
- In a medium bowl, combine Greek yogurt, squeezed cucumber, minced garlic, olive oil, lemon juice, and dill.
- Mix well and season with salt and pepper to taste.
- Let the tzatziki sit in the fridge for at least 15-20 minutes to allow flavors to meld.
Notes
Tzatziki goes well with grilled meats, roasted veggies, and can be used as a dip for pita chips or veggies. This sauce can be made ahead of time and lasts in the fridge for 3-4 days.
