Turkey Stuffing Meatloaf

Main Ingredients
  • 1.5 pounds ground turkey Preferably 93 percent lean for more moisture
  • 2 cups prepared stuffing Or 1.5 cups dry stuffing mix
  • 1 small onion Finely chopped
  • 2 stalks celery Finely chopped
  • 2 cloves garlic Minced
  • 2 large eggs
  • 1/2 cup low sodium chicken broth Plus more as needed
  • 2 tablespoons ketchup For glazing
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Preparation
  1. Heat the oven to 350°F (175°C). Grease a loaf pan or line a sheet pan with parchment.
  2. Soften onion and celery in a little oil in a skillet over medium heat for 5 minutes. Let cool slightly.
  3. In a big bowl, add turkey, cooled veggies, garlic, eggs, stuffing, broth, ketchup, Worcestershire, and seasonings. Mix gently with clean hands until just combined. If it looks dry, splash in another 1 to 2 tablespoons of broth.
Cooking
  1. Shape mixture into a loaf in the pan. For a sheet pan, form a loaf about 8 inches long for even cooking.
  2. Glaze top with a thin coat of ketchup mixed with a little maple syrup or brown sugar if desired.
  3. Bake for 50 to 60 minutes, until the center reaches 165°F on a meat thermometer. Let rest for 10 minutes before slicing.

Notes

You can prepare the loaf in the morning and refrigerate it. Add 5 to 10 minutes to the bake time if it goes into the oven cold. If using gluten-free stuffing, add extra broth to balance the dryness.
