For Assembly
  • 12 large Fresh jalapeños Medium to large size for easier filling.
  • 12 slices Regular cut bacon Avoid thick cut for best results.

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Wear gloves when handling jalapeños to avoid skin irritation.
  3. Slice jalapeños lengthwise and remove seeds and ribs.
  4. In a mixing bowl, combine cream cheese, shredded cheese, chopped brisket, garlic powder, and black pepper.
  5. Stuff each jalapeño half with the filling until mounded.
Wrapping & Cooking
  1. Wrap each stuffed jalapeño with a slice of bacon, spiraling around and securing with a toothpick.
  2. Place jalapeños on a rack over a baking sheet for crispiness.
  3. Bake in the oven for 20 to 30 minutes, checking for browned bacon and bubbling filling.
  4. For added crispiness, broil for a short time at the end if necessary.

  1. Let the jalapeños rest for 5 minutes before serving to avoid burns.
