Ingredients

For the Sweet Potatoes
  • 4 medium to large sweet potatoes Choose similar sizes for even baking.
  • 4 tablespoons butter Plus more if desired.
  • 2-4 tablespoons brown sugar Adjust according to desired sweetness.
  • 1 teaspoon ground cinnamon
  • 1 handful mini marshmallows A big handful for topping.
  • 1 tablespoon chopped pecans Optional for added crunch.
  • 1 pinch salt To balance the sweetness.
  • 1 tablespoon sour cream Optional.

Method

Preparation
  1. Preheat your oven to 400°F.
  2. Scrub the sweet potatoes, dry them, and poke each one a few times with a fork.
  3. Place the sweet potatoes directly on the oven rack or on a baking sheet.
Baking
  1. Bake the sweet potatoes for 45 to 70 minutes, depending on their size, until a knife slides in with little resistance.
  2. Let them cool for 5 minutes, then slice down the middle and fluff the insides with a fork.
Serving
  1. Add butter, a pinch of salt, brown sugar, and cinnamon to the fluffy center.
  2. Top the sweet potatoes with marshmallows and pecans.
  3. Return them to the oven for 3 to 6 minutes until the marshmallows are puffy and lightly golden. Watch closely to avoid burning.

Notes

For best results, ensure sweet potatoes are of similar size. Do not wrap in foil as it may trap moisture, making the insides less fluffy.
