Ingredients
  

Casserole Base
  • 32 oz frozen tater tots Do not thaw before baking.
  • 8 large eggs
  • 1 cup milk Can substitute with half and half for a richer flavor.
  • 1 lb breakfast sausage Cooked and crumbled.
  • 2 cup cheddar cheese Or a cheese blend of choice.
  • 1 tsp salt
  • 1 tsp black pepper
Optional Add-ins
  • 1 cup diced onion Can be added for extra flavor.
  • 1 cup diced bell pepper Can be added for additional veggies.
  • 1 tsp garlic powder Optional for added flavor.
  • to taste hot sauce For those who like a kick.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 baking dish.
  2. In a skillet, cook the sausage over medium heat until browned. Drain excess grease.
  3. In a large bowl, whisk together the eggs and milk, adding in salt, pepper, and any desired seasonings.
  4. Stir in the cooked sausage and about two-thirds of the cheese.
  5. Pour the egg mixture into the prepared baking dish.
  6. Layer the tater tots on top of the egg mixture.
Baking
  1. Bake in the preheated oven for 35-45 minutes, or until the center is set and the tater tots are crispy.
  2. Sprinkle the remaining cheese on top during the last 5-10 minutes of baking.
Serving
  1. Let the casserole rest for 5-10 minutes before slicing.

Notes

This casserole can be made ahead of time. Cook the sausage and whisk the eggs the night before, then assemble in the morning. Leftover slices can be stored in an airtight container in the fridge for up to 4 days. Reheat in the oven or air fryer for crispiness.
