Ingredients
  

For the Taco Seasoning
  • 2 tablespoons Chili powder For classic taco flavor
  • 1 teaspoon Cumin For warmth and depth
  • 1 teaspoon Garlic powder Or use fresh garlic
  • 1 teaspoon Onion powder Or use fresh onion
  • 1 teaspoon Paprika For color and smoky flavor
  • to taste Salt and pepper To wake up flavors
  • 1 pinch Cayenne pepper Optional for heat
For the Ground Beef Filling
  • 1 pound Ground beef (85/15) Classic choice for flavor
  • 1 small Onion, chopped Keep small for picky eaters
  • 2-3 cloves Garlic, minced Or use garlic powder
  • 1 cup Tomato sauce or salsa Just enough to make it saucy
  • as needed Water or broth Optional for loosening filling
  • 1 cup Black beans or corn Optional, for stretching the filling
For the Potatoes
  • 4 medium to large Russet potatoes Best for fluffy insides
Toppings
  • 1 cup Shredded cheddar cheese For melting on top
  • Diced tomatoes For fresh topping
  • Sliced jalapeños For heat
  • Shredded lettuce For crunch
  • Sour cream For creaminess
  • Salsa To serve on top
  • Crushed tortilla chips Optional for crunch

Method
 

Preparation
  1. Preheat oven to 425°F.
  2. Scrub the potatoes, dry them, poke holes with a fork, rub with oil, and sprinkle with salt.
  3. Bake the potatoes at 425°F for 50 to 65 minutes until tender.
Cooking the Filling
  1. In a pan, cook the chopped onion until softened.
  2. Add the ground beef and brown it.
  3. Drain excess grease if needed, then add garlic and taco seasoning.
  4. Stir in tomato sauce or salsa and simmer for a few minutes until saucy.
Assembling the Potatoes
  1. Once potatoes are done, cool slightly and slice the tops lengthwise.
  2. Scoop out some of the potato into a bowl, mash with salt and butter or sour cream if desired.
  3. Mix a portion of the beef filling into the fluffy potato or layer it separately.
  4. Stuff the potatoes, then top with cheddar cheese.
Final Baking
  1. Return the stuffed potatoes to the oven for 8 to 12 minutes until cheese melts.
  2. Top with desired toppings and serve.

Notes

These potatoes can be made ahead of time. Store the filling and baked potatoes separately, then stuff and heat right before serving for freshness.
