Ingredients
  

Main Ingredients
  • 2 cups corn (fresh, canned, or frozen) Use fresh corn cut off the cob for the best flavor.
  • 2 cups frozen lima beans Can also use canned, rinsed and drained.
  • 3 tablespoons butter Or bacon drippings for extra flavor.
  • 1 small onion, diced Shallots or green onions can also work.
  • 1 clove garlic, minced Optional, add in the last minute of cooking.
  • to taste salt
  • to taste black pepper
  • 1-2 tablespoons broth or water To help the veggies steam.
Optional Ingredients
  • 1 cup chopped bell pepper For added flavor.
  • 1 medium tomato, chopped For a fresh and light variation.
  • 1 pinch sugar Optional, to enhance sweetness.
  • 1 pinch smoked paprika For a smoky flavor.

Method
 

Preparation
  1. Melt butter in a skillet over medium heat.
  2. Add diced onion (and bell pepper if using) and cook until softened.
Cooking
  1. Add corn and lima beans. Stir everything together and let it heat through.
  2. Season with salt, black pepper, and a pinch of smoked paprika. Add garlic in the last minute of cooking.
  3. Add a splash of broth or water to help the veggies steam.
  4. Cook until everything is hot and tender, about 8 to 12 minutes.

Notes

Feel free to customize the succotash with additional ingredients. This dish holds well on low heat, and if it looks dry, add a bit more broth.
