Ingredients
  

For the Stuffing
  • 1 medium apple, diced small (Honeycrisp, Gala, or Granny Smith)
  • 1 small onion, finely chopped
  • 1 cup stuffing mix (boxed or leftover homemade)
  • 1 stalk celery, finely chopped (optional) Optional but nice addition
  • 3 tablespoons butter For sautéing
  • 1 cup chicken broth (or water) To moisten the stuffing
  • to taste salt and pepper
  • to taste garlic powder and dried thyme or sage (optional) Optional spices for added flavor
For the Pork Chops
  • 4 pieces thick cut pork chops (about 1 to 1.5 inches) Bone-in is best for juiciness
  • 2 tablespoons olive oil For searing the chops

Method
 

Preparation
  1. In a skillet, melt the butter and cook the chopped onion (and celery, if using) until soft.
  2. Stir in the diced apple and cook for 2 to 3 minutes.
  3. Add the stuffing mix and splash in the broth until it is moist but not soggy. Turn off the heat.
  4. Pat the pork chops dry and cut a pocket into the side of each chop.
  5. Season both sides of the chops with salt, pepper, and a little garlic powder.
  6. Spoon the apple stuffing into each pocket, being careful not to overfill.
Cooking
  1. Heat olive oil in an oven-safe skillet and sear the chops for 2 to 3 minutes per side until golden.
  2. Bake the chops in a preheated oven at 375°F until cooked through, approximately 12 to 18 minutes, depending on thickness.
  3. Remove from the oven when the center reaches 145°F and let them rest for 5 minutes before serving.

Notes

If the stuffing spills out, it usually means the pocket was cut through or filled too high. The dish still tastes great, even if it's a bit messy. For extra flavor, consider adding dried cranberries or chopped pecans to the stuffing.
