  • 1 lb Chicken (thighs or breasts) Cooked and sliced or chopped
  • 1 cup Corn (fresh, frozen, or canned) Drain well if using canned
  • 1/2 cup Mayonnaise For creaminess
  • 1/2 cup Sour cream For creaminess
  • 1 each Lime (juice and zest) Use for flavor
  • 1 tbsp Chili powder or tajin For a tangy spicy edge
  • 2 cloves Garlic (fresh or powdered) For flavor
  • 1/4 cup Cotija or feta cheese For topping
  • 1/4 cup Cilantro Optional but recommended
Toppings
  • 1 each Avocado (sliced) For fresh topping
  • 1 each Tomato (diced) For fresh topping
  • 1 cup Lettuce (shredded) For fresh topping
  • 1/4 cup Jalapenos (sliced) Optional for spice
  • 2 each Lime wedges For squeezing on top
  • 1/2 cup Tortilla chips (crushed) For crunch on top

Method

Preparation
  1. Cook the rice according to your normal method. Stir in lime juice and chopped cilantro if desired.
  2. Cook the chicken by seasoning with salt, pepper, chili powder, and garlic. Cook in a skillet with oil until done, then let rest before slicing.
  3. In a bowl, mix mayo, sour cream, lime juice, chili powder or tajin, garlic, and salt. Stir in corn. For extra flavor, char the corn in a hot pan.
Assembly
  1. Build your bowls starting with rice at the bottom, followed by chicken, a big spoonful of the corn mixture, cotija, cilantro, and any additional toppings.
  2. Taste and adjust the seasoning with more lime or salt, adding hot sauce if desired.

Notes

For best flavor, char the corn and keep toppings fresh. Use chicken thighs for juiciness and remember to keep wet toppings separate until serving.
