Strawberry Pop-Tart Pie

Ingredients
  

For the pie filling
  • 2 cups strawberries, fresh or frozen If frozen, thaw and drain a bit.
  • 1/3 cup sugar Adjust based on the sweetness of the berries.
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pinch salt
  • 6 to 8 strawberry Pop-Tarts Broken into bite-size pieces.
  • 1 egg (for egg wash) Optional but adds a nice golden color.
  • Extra Pop-Tart frosting or powdered sugar glaze for topping Optional.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and set a pie dish on a baking sheet.
  2. In a bowl, stir together strawberries, sugar, cornstarch, lemon juice, vanilla, and salt. Let it sit for about 5 minutes.
  3. Scatter half of the broken Pop-Tart pieces in the bottom of the crust.
  4. Spoon the strawberry mixture on top, including all the juice.
  5. Add the remaining Pop-Tart pieces on top.

Notes

Allow cooling for at least 1 hour before slicing to prevent the filling from running. For a fun twist, drizzle with powdered sugar glaze once cooled. Keep slices clean by wiping the knife between cuts.
