  • 1 cup chopped fresh strawberries Can use frozen strawberries
For the frosting
  • 8 ounces cream cheese, softened Use block cream cheese for best results
  • 1 stick unsalted butter, softened Keep at room temperature
  • 3 to 4 cups powdered sugar, sifted if lumpy Adjust sweetness to taste
  • 1 teaspoon vanilla extract Use pure vanilla for best flavor
  • 1 pinch salt Enhances flavor
  • 1 cup strawberry reduction, cooled Make ahead and allow to cool

Preparation
  1. Make the strawberry reduction: Add chopped strawberries to a small pot, simmer, and stir until thick (about 15 to 25 minutes). Let cool completely.
  2. Beat the softened butter and cream cheese together until smooth to avoid lumps.
  3. Add vanilla extract and pinch of salt, then mix again.
  4. Gradually add powdered sugar starting with 3 cups, adjusting sweetness as desired.
  5. Mix in the cooled strawberry reduction spoonful by spoonful until achieving desired color and flavor.

Notes

Frosting tastes even better after chilling for 15-20 minutes. If the frosting turns out soft, chill it or add more powdered sugar gradually to thicken.
