Strawberry Crackle Salad

Ingredients
  

For the creamy base
  • 1 box Strawberry gelatin mix One small box
  • 1 tub Cottage cheese Small to medium
  • 1 can Crushed pineapple Drained well
  • 1 tub Cool whip or any whipped topping
  • 2 cups Mini marshmallows
  • 1 cup Fresh strawberries Optional, but nice
For the crackle topping
  • 1 cup Crushed pretzels or crushed graham crackers
  • 3 tablespoons Melted butter
  • 1 tablespoon Sugar

Method
 

Preparation
  1. In a large bowl, stir together the cottage cheese and dry strawberry gelatin mix until well combined.
  2. Fold in the drained pineapple, ensuring that it is well-drained to prevent a runny salad.
  3. Add the mini marshmallows and mix gently to combine.
  4. Fold in the whipped topping carefully, taking care not to overmix.
  5. Chill in the refrigerator for at least 1 to 2 hours, preferably overnight.
  6. Before serving, add the crackle topping.
Crackle Topping
  1. Crush pretzels or graham crackers in a zip-top bag with a rolling pin.
  2. Mix crushed pretzels with melted butter and sugar, then toast in a skillet until fragrant.
  3. Allow the mixture to cool completely before sprinkling on top of the salad.

Notes

Store covered in the fridge. Keeps for about 3-4 days. Store the crackle topping separately until serving to retain its crunch.
