  • 1 box strawberry cake mix (about 15.25 oz)
  • 2 large eggs
  • 1/3 cup oil (vegetable or canola)
Optional Add-Ins
  • 1/2 cup white chocolate chips for extra sweetness
  • 2 tbsp sprinkles perfect for birthdays
  • 1 tbsp powdered sugar for a quick pretty finish

Method
 

Preparation
  1. Preheat your oven to 350°F and line a baking sheet with parchment paper, or lightly grease it.
  2. In a large bowl, add the strawberry cake mix, eggs, and oil. Stir until there are no dry pockets of mix left; the dough will be thick and a little sticky.
  3. If using, fold in white chocolate chips or sprinkles.
  4. Scoop the dough into balls, about 1 to 1.5 tablespoons each, and place them about 2 inches apart on the baking sheet.
Baking
  1. Bake for 9 to 11 minutes; the cookies should look set on top but still soft.
  2. Let them cool on the pan for 5 minutes, then transfer them to a cooling rack or plate.
  3. If desired, sprinkle with powdered sugar once fully cooled.

Notes

Chill the dough for 15 to 25 minutes if it's sticky. Use a cookie scoop for evenly sized cookies to ensure even baking. Store in an airtight container once cooled, and consider adding a slice of bread to prevent drying.
