Method

Preparation of Angel Food Cake
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the egg whites, cream of tartar, and salt.
  3. Beat with an electric mixer on high speed until stiff peaks form.
  4. Gradually add 1/2 cup of granulated sugar, continuing to beat until glossy.
  5. Sift together the cake flour and remaining sugar, then gently fold into the egg mixture.
  6. Add the vanilla extract and mix until just combined.
  7. Pour the batter into an ungreased tube pan.
  8. Bake for 35-40 minutes, or until the cake is golden and springs back when lightly pressed.
  9. Invert the pan and let the cake cool completely upside down.
Assembly
  1. Once cooled, run a knife around the edges of the cake to release it from the pan.
  2. Slice the cake and serve with sliced strawberries on top.
  3. Add whipped cream or strawberry sauce if desired.

Notes

To keep the cake's texture light, serve immediately topped with strawberries and cream. Store any leftovers in an airtight container.
