Stick of Butter Rice

Ingredients
  

Main Ingredients
  • 2 cups long grain white rice Avoid instant rice; jasmine or basmati can be used for different flavors.
  • 3 cups beef broth Can substitute with chicken broth.
  • 1 stick butter Whole stick preferred for richness; reduce additional salt if using salted butter.
  • 1 can French onion soup Can use onion soup mix with broth and water instead.
Optional Ingredients
  • to taste fresh parsley For garnish.
  • to taste black pepper For flavor enhancement.
  • 1 cup shredded cheese Optional, add in the last 10 minutes for a cheesy version.
  • 1 teaspoon garlic powder Optional for added flavor.
  • 2 cups shredded rotisserie chicken Optional to make it a more filling dish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grab a 9x13 inch baking dish.
  2. Add the rice to the dish, spreading it evenly.
  3. Pour in the beef broth and French onion soup, stirring lightly to mostly cover the rice.
  4. Place the stick of butter on top of the rice.
  5. Cover the dish tightly with foil to trap steam.
Baking
  1. Bake covered for about 30 minutes.
  2. Remove the foil and bake for another 25 to 30 minutes until liquid is absorbed and top is golden.
  3. Fluff the rice with a fork and let it sit for 5 minutes before serving.

Notes

If the rice comes out mushy or crunchy, check that the foil was tight, the oven temperature is correct, and that the right type of rice was used. Leftovers can be stored in an airtight container in the fridge for up to 4 days.
