Ingredients

For the Fajitas
  • 1 lb skirt steak Alternatively, flank or sirloin can be used.
  • 1 cup sliced bell peppers Use a mix of colors for sweetness and visual appeal.
  • 1 cup sliced onions Yellow or white onions work well.
  • 8 pieces tortillas Warm them before serving.
For the Marinade/Seasoning
  • 2 tablespoons olive oil Helps in distribution of flavors.
  • 1 tablespoon lime juice Adds brightness.
  • 1 teaspoon chili powder For a hint of spice.
  • 1 teaspoon cumin Enhances the savory flavor.
  • 1 teaspoon salt Adjust to taste.

Method

Marinate the Beef
  1. In a bowl, combine olive oil, lime juice, chili powder, cumin, and salt. Mix well.
  2. Add the skirt steak to the bowl and coat it with the marinade. Let it sit for 15-30 minutes.
Cook the Beef
  1. Heat a skillet over medium-high heat. Once hot, add the marinated steak.
  2. Cook for 3-4 minutes per side for medium-rare, or until desired doneness.
  3. Remove the steak from the skillet and let it rest for a few minutes.
Cook the Vegetables
  1. In the same skillet, add the sliced bell peppers and onions.
  2. Sauté for about 5-7 minutes until they are tender-crisp.
Serve
  1. Slice the rested steak against the grain into thin strips.
  2. Serve the beef and sautéed vegetables with warm tortillas, allowing everyone to build their own fajitas.

Notes

Using a good cut of beef and slicing against the grain is key for tenderness. Avoid crowding the skillet to develop flavors and colors.
