Ingredients
  

Main Ingredients
  • 10 ounces Frozen chopped spinach, thawed Squeeze out as much water as you can
  • 1 cup Bread crumbs Plain or seasoned
  • 0.5 cup Grated Parmesan Or a mix of Parmesan and mozzarella
  • 2 large Eggs Main binder
  • 0.5 cup Minced onion or onion powder
  • 1 clove Garlic Fresh or powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Red pepper flakes Optional
  • 1 teaspoon Italian seasoning Optional
  • 1 tablespoon Parsley Optional
  • 1 tablespoon Melted butter or olive oil Optional for richness

Method
 

Preparation
  1. Thaw the frozen spinach completely and squeeze out as much water as possible.
  2. In a bowl, mix together spinach, bread crumbs, cheese, seasonings, and onion.
  3. Add the eggs and mix until it creates a scoopable, slightly sticky mixture.
  4. If the mixture feels too soft, chill in the refrigerator for 10 to 15 minutes.
  5. Use your hands or a small cookie scoop to form the mixture into balls, approximately 1 to 1.5 inches wide.
  6. Place the balls on a baking sheet lined with parchment paper.
Cooking
  1. Preheat the oven to 375°F (190°C).
  2. Bake the spinach balls for 15 to 22 minutes until golden and set, flipping halfway through for even browning.
  3. Allow to cool for 5 minutes before serving.

Notes

These spinach balls can be made ahead and refrigerated or frozen for later use. Perfect with marinara dip, ranch, or lemony yogurt sauce.
