  • 1 cup Fresh or frozen spinach If using frozen, be sure to squeeze out excess water.
  • 1 can (14 oz) Artichoke hearts, drained and chopped
  • 8 oz Cream cheese, softened This is the base for thick texture.
  • 1/2 cup Sour cream Adds tang and creaminess.
  • 1/4 cup Mayonnaise Optional, for extra richness.
  • 2 cloves Garlic, minced Fresh is best, but powder works too.
  • 1 cup Mozzarella cheese, shredded For that melty top.
  • 1/2 cup Parmesan cheese, grated For extra flavor.
  • to taste dash Salt Add lightly as cheeses are salty.
  • to taste dash Pepper
  • 1/4 teaspoon Red pepper flakes Optional for heat.

Method
 

Preparation and Baking
  1. Preheat your oven to 375°F (190°C). Lightly grease a small baking dish.
  2. If using frozen spinach, thaw it and squeeze out as much liquid as possible.
  3. In a mixing bowl, stir together softened cream cheese, sour cream, and mayonnaise.
  4. Mix in garlic, chopped artichokes, spinach, half the mozzarella, and most of the parmesan. Season with salt and pepper.
  5. Spread the mixture into your baking dish. Top with the remaining mozzarella and a sprinkle of parmesan.
  6. Bake for 20 to 25 minutes until bubbly around the edges. Broil for an additional 1 to 2 minutes for a golden top if desired.
  7. Let it sit for 5 minutes before serving.

Notes

You can mix this dip ahead of time, refrigerate, and bake when you are ready. It can also be made in a slow cooker by mixing all ingredients and heating on low for about 2 hours.
