  • 3-4 cups Cooked shredded chicken Use rotisserie chicken for convenience.
  • 4 cups Cornbread, crumbled Homemade or store-bought. Day old works better.
  • 1 cup Onion, chopped For added flavor.
  • 1 cup Celery, chopped Cook with onion.
  • 1/2 cup Butter For sautéing the veggies.
  • 3-4 cups Chicken broth Low sodium recommended to control saltiness.
  • 4 large Eggs Helps the casserole set.
  • to taste Salt Seasoning to taste.
  • to taste Pepper Seasoning to taste.
  • 1-2 tsp Sage Use cautiously; adjust to taste.

Method
 

Preparation
  1. Cook your chicken until tender, then shred it. Alternatively, use rotisserie chicken.
  2. Make cornbread or crumble day-old cornbread.
  3. Sauté onion and celery in butter until soft.
  4. Mix shredded chicken, crumbled cornbread, sautéed vegetables, eggs, and chicken broth until slightly looser than desired.
Baking
  1. Pour mixture into a 9x13 baking dish.
  2. Bake until center is set and top is lightly browned, about 30-45 minutes.

Notes

Ensure the mixture looks a bit loose before baking to prevent dryness. Adjust seasoning before baking. Can be made ahead by mixing and refrigerating or freezing.
