Ingredients

For the Butter Beans
  • 2 cups butter beans (dried, frozen, or canned) Use dried beans for best texture; frozen are convenient; canned are pre-cooked.
  • 4 cups vegetable or chicken broth Vegetable broth can be used for a meat-free version.
  • 1 medium onion, chopped Adds flavor to the beans.
  • 2 cloves garlic, minced Enhances the seasoning.
  • 1 teaspoon salt Adjust based on broth used, especially if using salted meats.
  • 1 teaspoon pepper For seasoning.
Optional Add-ins
  • 1 cup smoked gammon hocks or bacon For a smoky flavor.
  • 1 cup smoked turkey A good alternative for a savory taste without pork.

Method

Preparation
  1. If using dried beans, soak them overnight in water.
  2. Rinse and drain the beans before cooking.
Cooking
  1. In a large pot, combine butter beans, broth, onion, and garlic.
  2. If using, add the smoked meats for more flavor.
  3. Bring to a boil, then reduce heat and simmer until the beans are tender (about 30 minutes for frozen, 1-2 hours for dried).
  4. Season with salt and pepper to taste.

Notes

Do not overcook the beans to maintain their texture. The liquid may thicken as the beans cool. Leftovers can be stored in the refrigerator for 3-4 days or frozen for longer storage.
