Main Ingredients
  • 1 cup sourdough discard Unfed discard works great. Thick or thin both work.
  • 2 tablespoons melted butter or olive oil Butter gives a richer flavor; olive oil is more savory.
  • 1/2 teaspoon salt Do not skip, it enhances the flavor.
Optional Seasonings
  • 1/2 teaspoon garlic powder Commonly added for extra flavor.
  • 1/2 teaspoon onion powder
  • 1 tablespoon dried rosemary or thyme
  • 2 tablespoons everything bagel seasoning
  • 2 tablespoons grated parmesan

Method
 

Preparation
  1. Preheat your oven to 325 F. Line a baking sheet with parchment paper.
  2. In a bowl, mix 1 cup sourdough discard with 2 tablespoons melted butter (or olive oil) and 1/2 teaspoon salt.
  3. Add seasonings if desired, like 1/2 teaspoon garlic powder.
  4. Pour the mixture onto the parchment and spread it very thin with a spatula.
Baking
  1. Bake for about 10 to 15 minutes, then lightly score the sheet into cracker shapes.
  2. Put it back in the oven and bake for another 15 to 25 minutes, until dry and lightly golden.
  3. Cool completely, then snap into pieces along the scored lines.

Notes

Store in a jar or airtight container on the counter. If softened, re-crisp in a 300 F oven for 5 minutes.
