Preparation
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- Cream the softened butter and granulated sugar together until fluffy and lighter in color, about 2 minutes.
- Mix in the eggs until smooth.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- Add the dry ingredients to the wet mixture and stir just until no dry flour remains.
- In a small bowl, mix together the cinnamon and sugar for the coating.
- Scoop dough into balls (about 1 1/2 tablespoons each), roll in cinnamon sugar, and place on the baking sheet with space between.
Baking
- Bake in the preheated oven for 9 to 11 minutes. The edges should look set while the centers should appear slightly soft.
- Cool on the pan for 5 minutes, then transfer to a wire rack to finish cooling.
Notes
For softer cookies, store with a slice of bread in the container. If the dough feels sticky, chill it for 20 to 30 minutes before baking.
