Ingredients
  

For the Cookies
  • 1 cup unsalted butter, softened Use room temperature butter for better mixing.
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 2.75 cups all purpose flour
  • 2 teaspoons cream of tartar Makes the cookies soft and adds tangy flavor.
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Cinnamon Sugar Coating
  • 1/3 cup granulated sugar
  • 1.5 tablespoons ground cinnamon Add more if you love a strong cinnamon flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. Cream the softened butter and granulated sugar together until fluffy and lighter in color, about 2 minutes.
  3. Mix in the eggs until smooth.
  4. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  5. Add the dry ingredients to the wet mixture and stir just until no dry flour remains.
  6. In a small bowl, mix together the cinnamon and sugar for the coating.
  7. Scoop dough into balls (about 1 1/2 tablespoons each), roll in cinnamon sugar, and place on the baking sheet with space between.
Baking
  1. Bake in the preheated oven for 9 to 11 minutes. The edges should look set while the centers should appear slightly soft.
  2. Cool on the pan for 5 minutes, then transfer to a wire rack to finish cooling.

Notes

For softer cookies, store with a slice of bread in the container. If the dough feels sticky, chill it for 20 to 30 minutes before baking.
