Preparation
  1. Preheat your oven to 350°F (175°C) and line a 9x13 pan with parchment paper or grease it well.
  2. In a large bowl, cream the softened butter and sugar until fluffy.
  3. Add the eggs and vanilla and mix until smooth, scraping the bowl as needed.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and 2 teaspoons of cinnamon.
  5. Add the dry mix into the wet mix and stir until no dry flour remains; do not overmix.
  6. Spread the dough evenly into the lined pan.
  7. Mix the 3 tablespoons sugar with 1 teaspoon cinnamon for the topping and sprinkle it generously over the dough.
Baking
  1. Bake in the preheated oven for about 20 to 25 minutes, until the edges are set and the center looks slightly soft.
  2. Cool the bars completely in the pan before slicing to prevent crumbling.

Notes

For the best texture, ensure the butter is softened correctly, do not overbake, and allow cooling before slicing. If you prefer, chill the pan for 20 minutes to achieve cleaner cuts.
