  • 4 pieces Boneless skinless chicken thighs (or breasts) Chicken thighs stay juicier than breasts.
  • 1 Large onion Sliced.
  • 1 tablespoon Garlic powder Or use fresh garlic.
  • 1 teaspoon Paprika
  • 1 cup Chicken broth
  • 1 tablespoon All-purpose flour For thickening the gravy.
  • 2 tablespoons Butter or oil For sautéing.
  • 1/2 cup Optional: milk or cream Makes gravy creamier.
  • 1 pinch Cayenne pepper For extra kick, optional.

Method
 

Preparation
  1. Season the chicken on both sides with salt and pepper.
  2. Heat oil or butter in a pan over medium-high heat and sear the chicken until golden, about 5-7 minutes per side. Remove and set aside.
  3. In the same pan, add the sliced onions and cook until softened, stirring frequently.
  4. Sprinkle flour over the onions and stir for about 2 minutes to cook the flour.
  5. Slowly pour in the chicken broth while stirring constantly until the mixture thickens.
  6. Return the chicken to the pan, nestling it into the gravy. Lower the heat, cover, and simmer until the chicken is cooked through, about 15-20 minutes.
  7. Taste the gravy and adjust seasoning with additional salt, pepper, or garlic powder as desired.

Notes

Serve with rice, mashed potatoes, or biscuits to soak up the gravy. This dish can be frozen; reheat gently on the stove.
