  • 2.5 pounds Flank steak About 2 to 2.5 pounds
  • 1 large Onion, sliced
  • 3-4 cloves Garlic, minced
  • 1 cup Beef broth (or stock)
  • 2 tablespoons Soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Tomato paste Optional, adds richness
  • 1 tablespoon Brown sugar or honey
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt Plus more to taste
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Cornstarch Mixed with 2 tablespoons cold water, optional for thickening
  • Fresh parsley or cilantro For serving

Method
 

Preparation
  1. Layer the sliced onion in the bottom of your slow cooker.
  2. Pat the flank steak dry with paper towels, then rub it with salt, pepper, and smoked paprika. Optionally, sear it in a hot pan for 1-2 minutes per side.
  3. Place the steak on top of the onions and add garlic around it.
  4. In a bowl, whisk together broth, soy sauce, Worcestershire, tomato paste, and brown sugar, then pour it over the steak.
Cooking
  1. Cook on LOW for 7 to 8 hours or HIGH for 3.5 to 4.5 hours.
  2. When done, move the steak to a cutting board and let it rest for 5 to 10 minutes, then slice or shred.
  3. For a thicker sauce, stir in the cornstarch slurry, cover, and cook on HIGH for 10 to 15 minutes.

Notes

Use enough liquid for braising, cook long enough for tenderness, and always rest the meat before slicing. Searing first adds extra flavor.
