Slow Cooker Chicken with Stuffing

Ingredients
  

Main Ingredients
  • 2 pounds Boneless chicken (breasts or thighs) Both options work well, thighs are juicier.
  • 1 box Boxed stuffing mix
  • 1 can Cream of chicken soup Can swap with cream of mushroom or cream of celery.
  • 1/2 cup Sour cream or plain Greek yogurt Greek yogurt can lighten the dish.
  • 1/2 cup Chicken broth Use to moisten stuffing.
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1/2 teaspoon Black pepper Adjust to taste.
Optional Ingredients
  • 2 cups Frozen vegetables (green beans, peas, or mixed veggies) Add under the chicken or around the edges.

Method
 

Preparation
  1. Lightly spray the slow cooker insert with cooking spray.
  2. Add the chicken in a single layer.
  3. In a bowl, stir together the cream of chicken soup, sour cream, and a splash of broth.
  4. Pour the mixture over the chicken and season with garlic powder, onion powder, and black pepper.
  5. Mix the stuffing with a small amount of broth until moistened, then gently spread it over the chicken.
Cooking
  1. Cover and cook on low for 4 hours, or until the chicken is cooked through and easy to shred.
Serving
  1. Fluff the stuffing with a fork and spoon some of the creamy sauce over the top.
  2. Shred the chicken right in the slow cooker if desired.

Notes

Perfect meal for busy nights; can be stored in the fridge for up to 3-4 days. Great for leftovers.
