  • 4 pieces bone-in or boneless pork chops, about 1 inch thick Bone-in rib chops for best flavor, or boneless loin chops for a leaner option.
  • 1 tablespoon salt For seasoning pork chops.
  • 1 teaspoon black pepper For seasoning pork chops.
  • 1 teaspoon garlic powder Optional seasoning for the pork chops.
For the Gravy
  • 1 tablespoon butter To sauté the onions.
  • 1 medium onion, diced To create the base of the gravy.
  • 8 ounces cremini or button mushrooms, sliced For flavor in the gravy.
  • 2 tablespoons all-purpose flour To thicken the gravy.
  • 2 cups low-sodium chicken broth Avoid over-salting the gravy.
  • 1/2 cup milk or cream Optional for a creamier gravy.

Method
 

Cooking the Pork Chops
  1. Pat the pork chops dry with paper towels and season on both sides with salt, pepper, and garlic powder.
  2. Heat a skillet over medium-high heat and sear the pork chops for about 4-5 minutes on each side until golden brown.
  3. Remove the pork chops from the skillet and set aside to rest.
Making the Gravy
  1. In the same skillet, melt the butter; add the diced onion and sauté until softened and lightly golden.
  2. Add the sliced mushrooms and cook until they are browned and have released their moisture.
  3. Sprinkle in the flour and cook for about a minute, stirring constantly.
  4. Gradually pour in the broth while stirring to prevent lumps, then add the milk or cream if using.
  5. Let the gravy simmer until it thickens, stirring occasionally.
  6. Nestle the pork chops back into the gravy and let them cook for an additional 5 minutes to heat through.

Notes

Serve with mashed potatoes or egg noodles to soak up the gravy. Leftovers can be stored in an airtight container for 3-4 days.
