  • 2 cups blanched almond flour Use good-quality almond flour for best results.
  • 1 cup granulated sugar
  • 2 egg whites Ensure no yolk is included.
  • 1 teaspoon almond extract Optional, use sparingly.
  • 1 tablespoon orange zest Optional for added flavor.
  • 1/2 cup confectioners' sugar For dusting.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a large mixing bowl, mix together the almond flour and granulated sugar.
  3. Whisk the egg whites in a separate bowl until frothy.
  4. Pour the whipped egg whites into the dry mixture and stir gently until combined.
  5. Add the almond extract and orange zest, if using, and mix well.
Baking
  1. Scoop about a tablespoon of dough and roll it into a ball with your hands.
  2. Place the balls on a baking tray lined with parchment paper, spacing them apart.
  3. Dust each ball with confectioners' sugar.
  4. Bake in the preheated oven for 15-18 minutes, until lightly golden.
  5. Allow to cool for a minute before transferring to a wire rack.

Notes

Super easy to make! Don’t overmix the dough. If too sticky, chill it for 10 minutes. For variations, press a whole almond on top before baking.
