Preparation
- Soak rice noodles in hot water until bendy, then drain.
- Whisk the peanut sauce ingredients in a bowl until smooth.
Cooking
- In a hot pan with a little oil, cook the shrimp until pink and curled, then remove from the pan.
- Scramble the eggs in the same pan until cooked.
- Add minced garlic to the pan, then add the drained noodles and the whisked sauce.
- Toss in the bean sprouts and green onions, then add the shrimp back in.
Serving
- Top with crushed peanuts, cilantro, and lime juice before serving.
Notes
This dish can be customized with other proteins or additional vegetables. Make sure not to overcook the shrimp to keep it juicy.
