  • 1 can Refried beans Warm slightly for easy spreading.
  • 1 lb Ground beef Can substitute with turkey or leftover taco meat.
  • 1 cup Sour cream Can use Greek yogurt for a lighter option.
  • 1 cup Salsa Use chunkier salsa for texture or smooth for layering.
  • 1 head Lettuce Iceberg or romaine for crunch.
  • 1 cup Shredded cheese Cheddar, Monterey Jack, or a taco blend.
Toppings
  • 1 cup Tomatoes Diced.
  • 0.5 cup Olives Sliced.
  • 0.5 cup Green onions Chopped.
  • 1 each Jalapenos Sliced, optional for heat.
  • 1 Avocado Optional.

Method
 

Cooking the Meat
  1. Brown the ground beef in a skillet, drain the grease, then stir in taco seasoning with a splash of water. Simmer until it thickens and let it cool.
Assembling the Salad
  1. Spoon refried beans into the bottom of your bowl. If stiff, microwave for 20 to 30 seconds to soften.
  2. Spread the ground beef over the beans evenly.
  3. Mix sour cream with a little taco seasoning or salsa and spread it carefully on top.
  4. Add a layer of salsa, ensuring it's thick to avoid sogginess.
  5. Top with a generous layer of shredded lettuce and cheese.
  6. Finish with toppings like tomatoes, olives, green onions, and avocado.
  7. Add crushed tortilla chips on top or serve chips on the side.

Notes

Keep chips separate when preparing for potlucks to avoid sogginess. For best results, let the meat cool before adding layers and use thicker salsa to maintain layer definition.
