Ingredients
  

For the Banana Bread
  • 3 large very ripe bananas, mashed Aim for about 1 and 1/2 cups of mashed banana.
  • 1/2 cup melted unsalted butter Melted butter gives a moist, dense crumb.
  • 2 large eggs, room temperature
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon cinnamon
  • 1/2 to 2/3 cup salted caramel sauce, plus extra for drizzling Salt to taste.
  • 1/2 cup chopped toasted pecans or walnuts (optional) Toast nuts first for better flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In one bowl, whisk together the dry ingredients: flour, baking soda, salt, and cinnamon.
  3. In another bowl, mix the mashed bananas, melted butter, brown sugar, eggs, and vanilla until well combined.
  4. Pour the dry ingredients into the wet ingredients and stir until just combined.
  5. Layer half the batter into a greased and lined 9x5 loaf pan.
  6. Dollop half the caramel sauce in spoonfuls on top of the batter and gently swirl using a butter knife.
  7. Repeat with the remaining batter and caramel.
Baking
  1. Bake in the preheated oven for 50-60 minutes, checking for doneness with a toothpick; it should come out with a few moist crumbs.
  2. If the top is browning too quickly, tent it loosely with foil at the 40-minute mark.
Cooling
  1. Cool the bread in the pan for 15 minutes before transferring it to a wire rack.
  2. While still warm, drizzle with additional caramel and sprinkle with flaky salt.
  3. Let cool for another 30-40 minutes before slicing.

Notes

For variations, consider adding chocolate chunks, nuts on top, or a cinnamon sugar swirl. If using dairy-free ingredients, substitute butter with oil and use a dairy-free caramel.
