Ingredients
  

Main Ingredients
  • 3 to 4 cups shredded rotisserie chicken White meat, dark meat, or a mix
  • 1/2 cup mayo or do half mayo, half Greek yogurt
  • 1 to 2 tablespoons sour cream for extra creaminess (optional)
  • 1 teaspoon Dijon mustard optional, but adds a nice little zip
  • 1 to 2 teaspoons lemon juice or a small splash of pickle juice
  • 1/3 cup diced celery
  • 2 tablespoons diced red onion or green onion
  • Salt and black pepper to taste
Optional Add-ins
  • chopped grapes
  • diced apples
  • toasted nuts
  • dried cranberries

Method
 

Preparation
  1. Shred the rotisserie chicken and toss it into a big bowl.
  2. In a small bowl, stir together mayo, sour cream, Dijon, and lemon juice.
  3. Pour the dressing over the chicken and mix until it’s nicely coated.
  4. Stir in celery and onion, then taste for salt and pepper.
  5. Cover and chill for at least 20 to 30 minutes if you can. It gets better as it sits.

Notes

Use an airtight container to store leftovers. Consume within 3 to 4 days. Stir before serving and do not freeze. Adjust ingredients according to personal taste and preferences.
