Ingredients
  

For the Marinade
  • 3-4 cloves garlic, minced (or grated)
  • 2 tablespoons fresh rosemary, chopped (or 2 teaspoons dried)
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice (plus extra wedges for serving)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Dijon mustard (optional) For extra tang
  • 1 pinch red pepper flakes (optional) If you like heat
Main Ingredients
  • 8 pieces lamb chops (about 1 to 1.5 pounds total) Aim for loin chops or rib chops about 1 inch thick.

Method
 

Prepare Marinade
  1. In a medium bowl, stir together olive oil, garlic, rosemary, lemon juice, salt, pepper, and Dijon, if using.
  2. Add lamb chops and toss until coated.
  3. Marinate for 15 to 30 minutes, or up to 4 hours for maximum flavor.
  4. Refrigerate during marination, and let the chops sit at room temperature for 15 minutes before grilling.
Grill Lamb Chops
  1. Preheat the grill to medium-high heat.
  2. Clean and oil the grates.
  3. Shake off excess marinade from the chops.
  4. Grill for 3 to 4 minutes per side for medium-rare chops that are about 1 inch thick.
  5. Let the lamb chops rest for 5 minutes before serving.

Notes

Pat the lamb dry before marinating for better browning. Avoid over-marinating in lemon juice to prevent cooking the meat.
