Preparation
- Place chicken in the bottom of your slow cooker. Scatter onion underneath or around the chicken, if using.
- Add enough root beer to come about halfway up the chicken, without drowning it.
Cooking
- Cook on LOW for about 6 to 7 hours or HIGH for about 3 to 4 hours until the chicken is very tender.
- Carefully pour off most of the cooking liquid, leaving just a little to keep things moist.
- Stir in barbecue sauce and cook for an additional 20 to 30 minutes on HIGH to thicken the sauce.
Serving
- Shred the chicken in the slow cooker for sandwiches, or slice it if you prefer a plated dinner.
Notes
Keep well in the fridge for 3 to 4 days. Can be frozen for 2-3 months. Best served with sandwiches, rice bowls, or over baked potatoes.
