Ingredients
  

Main Ingredients
  • 1 jar Roasted red peppers Jarred is fine for speed; drain if necessary.
  • 1/2 cup Toasted almonds Can substitute with hazelnuts.
  • 1 clove Garlic Add more if you love garlic.
  • 1/4 cup Olive oil For blending and silkiness.
  • 1 tbsp Vinegar Sherry or red wine vinegar is best.
  • 1 tsp Smoked paprika Adds a smoky flavor.
  • 1 pinch Salt
  • 1 pinch Black pepper
Optional Thickener
  • 1/4 cup Bread crumbs Use more nuts for gluten-free.

Method
 

Preparation
  1. Toast the nuts in a dry pan over medium heat until they are golden and smelling nutty, about 5 minutes.
  2. Add roasted red peppers, toasted almonds, garlic, smoked paprika, vinegar, salt, pepper, and olive oil to a blender or food processor.
  3. Blend until mostly smooth with a bit of texture. Taste and adjust seasoning as needed.
  4. If possible, let the sauce sit for 10 to 15 minutes to allow flavors to meld.
  5. Store in a jar in the fridge. It will last about 4 to 5 days; stir in a teaspoon of water or olive oil if thickened.

Notes

Start with a small amount of garlic and adjust according to your taste. Toasting the nuts can greatly enhance flavor. Use jarred roasted peppers for convenience.
