Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 baking dish.
- Crush the Ritz crackers. Place them in a zip-top bag and use a rolling pin to crush them into small pieces, not dust.
- In a shallow bowl, mix the crushed crackers with garlic powder, onion powder, pepper, and a pinch of salt.
- In another bowl, stir together the sour cream and a tiny pinch of salt. If too thick, add a spoonful of milk to loosen.
- Pat the chicken dry with paper towels to help the coating stick.
- Coat each piece of chicken with the sour cream mixture, then press it into the cracker crumbs for a thick coating.
- Place the coated chicken in the greased baking dish. Drizzle melted butter over the top evenly.
Baking
- Bake in the preheated oven for 25 to 35 minutes, or until the topping is golden and the chicken is cooked through.
Notes
For thicker chicken, slice them in half lengthwise or pound slightly for even cooking. Make sure to drizzle butter right before baking for a crunchy topping.
