Preparation
- Cut the chicken into even cubes, about 1.5 inches each.
- In a bowl, toss the chicken with ranch seasoning, minced garlic, grated Parmesan, olive oil, black pepper, and salt until evenly coated.
- Let the mixture sit and marinate for at least 30 minutes.
- If using wooden skewers, soak them in water for 15 minutes to prevent burning.
Cooking
- Thread the marinated chicken onto the skewers.
- Preheat the grill and place the skewers on the grill.
- Cook for about 10 minutes, flipping occasionally until cooked through and lightly charred.
- Optionally, sprinkle with additional Parmesan before serving.
Notes
These skewers can be prepped in advance and marinated overnight for enhanced flavor. Store leftovers in an airtight container for up to 3 days. They can be eaten cold, reheated in the microwave, or gently reheated in the oven.
