Main Ingredients
  • 6 cups Chex cereal Rice or corn both work
  • 1 cup chocolate chips Semi-sweet is the usual choice
  • 1/2 cup creamy peanut butter Easiest to melt
  • 1/4 cup butter Helps it melt smooth and coat better
  • 1 teaspoon vanilla extract Optional for extra flavor
  • 1 cup powdered sugar For coating
  • 1 pinch salt Especially if peanut butter is unsalted

Method
 

Preparation
  1. Measure your cereal into a large mixing bowl.
  2. In a microwave-safe bowl, add chocolate chips, peanut butter, and butter. Microwave in short bursts, stirring each time until it is smooth and glossy.
  3. Stir in vanilla extract and a tiny pinch of salt.
  4. Pour the warm chocolate mixture over the cereal and fold gently until everything is coated.
  5. Add powdered sugar to a large zip bag or lidded container. Pour in the coated cereal, seal the bag/container, and shake until every piece is covered.
  6. Spread it out on a baking sheet or parchment to cool.

Notes

Store in an airtight container for up to 1 week at room temperature. You can refrigerate or freeze it, but be aware of changes in texture. For extra peanut buttery flavor, add more peanut butter but keep the chocolate in check.
