Preparation
- Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease it.
Making the Cake
- In a bowl, whisk eggs and sugar until smooth and lighter in color. Stir in pumpkin and vanilla.
- In another bowl, whisk flour, baking powder, baking soda, salt, and pumpkin pie spice. Fold into the wet mixture.
- Spread batter evenly in the pan and bake for about 12 to 15 minutes. The cake should spring back when lightly touched.
Rolling the Cake
- Dust a clean kitchen towel with powdered sugar and flip the hot cake onto the towel, peeling off the parchment.
- Roll the cake from the short end while still warm and let it cool completely rolled up.
Making the Filling
- Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating again until creamy.
Filling the Cake
- Carefully unroll the cooled cake and spread the filling in an even layer, leaving a small border.
- Roll it back up without the towel.
Chilling and Serving
- Wrap the roll in plastic wrap and chill for at least 1 hour.
- Dust with powdered sugar, slice with a serrated knife, and enjoy.
Notes
Chill it well for cleaner slices. Store wrapped in plastic in the refrigerator for 3-4 days or freeze for up to 2 months.
