Ingredients
  

For the Cake
  • 1 cup Pumpkin puree Use pure pumpkin puree, not pie filling.
  • 3 large Eggs Helps the cake stay flexible.
  • 1 cup Granulated sugar Sweetens the cake.
  • 1 cup All purpose flour Provides structure.
  • 1 teaspoon Baking powder For lift.
  • 1 teaspoon Baking soda For lift.
  • 2 teaspoons Pumpkin pie spice Or substitute with 1.5 teaspoons of cinnamon plus a pinch of nutmeg and cloves.
  • 1/2 teaspoon Salt Enhances flavor.
For the Filling
  • 8 oz Cream cheese Base for the filling.
  • 1/4 cup Butter Adds richness.
  • 1 cup Powdered sugar Sweetens the filling.
  • 1 teaspoon Vanilla extract Rounds out the flavor.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease it.
Making the Cake
  1. In a bowl, whisk eggs and sugar until smooth and lighter in color. Stir in pumpkin and vanilla.
  2. In another bowl, whisk flour, baking powder, baking soda, salt, and pumpkin pie spice. Fold into the wet mixture.
  3. Spread batter evenly in the pan and bake for about 12 to 15 minutes. The cake should spring back when lightly touched.
Rolling the Cake
  1. Dust a clean kitchen towel with powdered sugar and flip the hot cake onto the towel, peeling off the parchment.
  2. Roll the cake from the short end while still warm and let it cool completely rolled up.
Making the Filling
  1. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating again until creamy.
Filling the Cake
  1. Carefully unroll the cooled cake and spread the filling in an even layer, leaving a small border.
  2. Roll it back up without the towel.
Chilling and Serving
  1. Wrap the roll in plastic wrap and chill for at least 1 hour.
  2. Dust with powdered sugar, slice with a serrated knife, and enjoy.

Notes

Chill it well for cleaner slices. Store wrapped in plastic in the refrigerator for 3-4 days or freeze for up to 2 months.
