Preparation
- Salt the roast 1 day before if time allows and leave it uncovered in the fridge.
- Remove the roast from the fridge 1 to 2 hours before cooking to bring it to room temperature.
Cooking
- Preheat the oven to 450°F (232°C).
- Season the roast generously with salt, pepper, garlic, and herbs.
- Roast the prime rib at high temperature for about 15-20 minutes until it achieves a nice brown crust.
- Reduce the oven temperature to 325°F (163°C) and continue to roast until desired doneness is reached.
- Use the meat thermometer to check internal temperature: pull at 120-125°F for rare, 125-130°F for medium rare, and 135°F for medium.
Resting
- Tent the roast with foil and let it rest for 20-30 minutes before slicing.
