Preparation
- Slice leeks into thin half moons, rinse well in a bowl of water to remove grit, and let drain.
- Peel and chop Yukon Gold potatoes.
Cooking
- Melt butter or warm olive oil in a soup pot over medium heat.
- Add leeks with a pinch of salt. Stir and cook for 8 to 10 minutes until soft and sweet, not browned.
- Stir in garlic and cook for about 30 seconds, then add thyme.
- Add the chopped potatoes and pour in broth until potatoes are just covered.
- Bring to a gentle simmer and cook until potatoes are tender, about 15 to 20 minutes.
- Turn off the heat and blend until smooth using an immersion blender, or transfer to a stand blender in batches.
- If desired, stir in cream or milk, and add salt, pepper, and a squeeze of lemon to taste.
Notes
This soup stores well in the fridge for 3 to 4 days or can be frozen for up to 2-3 months. Consider topping with crispy bacon bits or fresh herbs for added flavor.
