Ingredients
  

For the Marinade
  • 1 cup orange juice fresh or bottled
  • 1/4 cup lime juice adds sharp punch
  • 4 cloves garlic minced
  • 3 tablespoons oil helps chicken brown and prevents sticking
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika or regular paprika
  • 1 teaspoon oregano or Italian seasoning as a substitute
  • 1 teaspoon black pepper
  • 1 teaspoon salt to taste
  • 1 teaspoon soy sauce optional for deeper flavor
  • 1/2 teaspoon chili powder optional for heat
For Cooking
  • 2 pounds chicken thighs or breasts thighs preferred for juiciness

Method
 

Preparation
  1. In a bowl, stir together orange juice, lime juice, oil, minced garlic, cumin, paprika, oregano, salt, and pepper. If using, add soy sauce or chili powder.
  2. Put chicken in a zip top bag or a shallow dish and pour the marinade over it. Toss to coat.
  3. Refrigerate for at least 30 minutes; longer (2-6 hours) is better. Do not marinate more than overnight.
Cooking
  1. Grill on medium-high heat for 5-7 minutes per side until browned and cooked through.
  2. Alternatively, cook in a grill pan, oven at 425°F, or a skillet with medium-high heat and oil.
Serving
  1. Let the chicken rest for 5 minutes before slicing.
  2. Serve in tacos, rice bowls, salads, or as a sandwich.

Notes

Leftovers can be used in various meals, and freezing options are available for both raw and cooked chicken. Adjust spices and ingredients to personal preference.
