Preparation
- In a bowl, stir together orange juice, lime juice, oil, minced garlic, cumin, paprika, oregano, salt, and pepper. If using, add soy sauce or chili powder.
- Put chicken in a zip top bag or a shallow dish and pour the marinade over it. Toss to coat.
- Refrigerate for at least 30 minutes; longer (2-6 hours) is better. Do not marinate more than overnight.
Cooking
- Grill on medium-high heat for 5-7 minutes per side until browned and cooked through.
- Alternatively, cook in a grill pan, oven at 425°F, or a skillet with medium-high heat and oil.
Serving
- Let the chicken rest for 5 minutes before slicing.
- Serve in tacos, rice bowls, salads, or as a sandwich.
Notes
Leftovers can be used in various meals, and freezing options are available for both raw and cooked chicken. Adjust spices and ingredients to personal preference.
