  • 2-4 pieces Eggs Depending on hunger
  • 3-5 tablespoons Marinara or pizza sauce
  • 1 handful Mozzarella (shredded) Shredded is easiest
  • a few slices or crumbles Pepperoni or cooked sausage
  • a pinch Italian seasoning or oregano
  • to taste Salt and pepper
  • optional Mushrooms, bell peppers, olives, spinach, red pepper flakes For additional toppings
  • a little Oil or butter For the pan

Method
 

Preparation
  1. Warm a small nonstick skillet over medium heat and add a little oil or butter for light coating.
  2. Spoon in the marinara and spread it. Let it bubble for about 30 seconds.
  3. Make little wells in the sauce and crack the eggs into them. Season with salt, pepper, and Italian seasoning.
  4. Add toppings around the eggs, such as pepperoni and sliced mushrooms.
  5. Sprinkle mozzarella on top. Cover the skillet with a lid and lower the heat to medium low.
  6. Cook for 4 to 7 minutes, depending on how you like your yolks.
  7. Remove from heat when the whites are set and cheese is melted. Add a sprinkle of red pepper flakes before serving.

Notes

For variations, add more meat, vegetables, or different cheeses. Use medium low heat to avoid splatter. Pre-cook watery toppings for a thicker result. Serve sides like avocado or hash browns for a complete meal.
