- Warm a small nonstick skillet over medium heat and add a little oil or butter for light coating.
- Spoon in the marinara and spread it. Let it bubble for about 30 seconds.
- Make little wells in the sauce and crack the eggs into them. Season with salt, pepper, and Italian seasoning.
- Add toppings around the eggs, such as pepperoni and sliced mushrooms.
- Sprinkle mozzarella on top. Cover the skillet with a lid and lower the heat to medium low.
- Cook for 4 to 7 minutes, depending on how you like your yolks.
- Remove from heat when the whites are set and cheese is melted. Add a sprinkle of red pepper flakes before serving.
Notes
For variations, add more meat, vegetables, or different cheeses. Use medium low heat to avoid splatter. Pre-cook watery toppings for a thicker result. Serve sides like avocado or hash browns for a complete meal.
