Pistachio Dream Cookie Bars

For the Cookie Bars
  • 1 cup Unsalted butter, softened Should be soft enough to cream easily.
  • 1 cup Brown sugar For a chewy sweetness.
  • 1 cup White sugar For balanced sweetness.
  • 2 Eggs Helps to hold everything together.
  • 2 teaspoons Vanilla extract Do not skip it.
  • 2 cups All-purpose flour Main structure for the bars.
  • 1 packet Pistachio instant pudding mix For flavor and soft texture.
  • 1 teaspoon Baking powder To provide lift.
  • 1/2 teaspoon Salt Enhances flavor.
  • 1 cup Chopped pistachios Lightly salted is fine.
  • 1/2 cup White chocolate chips Optional for extra sweetness.

Method
 

Preparation
  1. Set your oven to 350 F and line a 9x13 pan with parchment paper or lightly grease it.
  2. Cream the softened butter with brown and white sugar until fluffy and lighter in color.
  3. Mix in the eggs one at a time, followed by the vanilla extract, scraping down the bowl.
  4. In a separate bowl, mix the flour, pistachio pudding mix, baking powder, and salt.
  5. Add the dry ingredients to the wet mixture and mix until there are no flour streaks.
  6. Fold in chopped pistachios and optional white chocolate chips.
  7. Press the dough evenly into the prepared pan and bake for 20 to 26 minutes, until the edges are lightly golden and the center is soft.
  8. Allow cooling in the pan for at least 30 minutes before slicing.

Notes

For nicer slices, chill the bars for 30 minutes before cutting. You can also drizzle melted white chocolate on top for added flair.
