- In a big bowl, stir the instant pudding mix with the undrained crushed pineapple. It will look loose at first, then start thickening.
- Fold in the shredded coconut. If you are adding marshmallows or nuts, toss them in here too.
- Gently fold in the whipped topping until it is creamy and even. Do not overmix, just fold until you do not see big streaks.
- Cover and chill for at least 1 to 2 hours. Overnight is totally fine too.
- Spoon into a serving bowl or little cups. Top with cherries or extra coconut if you want.
Notes
Serve cold straight from the fridge. If it sits out for a long time, it will soften, so keep it in a cooler or set the bowl over ice in hot weather. Adjust coconut to your taste, and consider sprinkling toasted coconut on top before serving for added crunch and aroma.
