Piña Colada Fluff

Ingredients
  

Main Ingredients
  • 1 box Instant vanilla pudding mix Use the small box.
  • 1 can Crushed pineapple Do not drain; keep the juice.
  • 1 container Cool Whip or another whipped topping Thawed.
  • 1 cup Sweetened shredded coconut
  • 1 cup Mini marshmallows Optional but fun.
  • 1/2 cup Chopped nuts like pecans or macadamias Optional.
  • to taste Maraschino cherries for topping Optional but cute.

Method
 

Preparation
  1. In a big bowl, stir the instant pudding mix with the undrained crushed pineapple. It will look loose at first, then start thickening.
  2. Fold in the shredded coconut. If you are adding marshmallows or nuts, toss them in here too.
  3. Gently fold in the whipped topping until it is creamy and even. Do not overmix, just fold until you do not see big streaks.
  4. Cover and chill for at least 1 to 2 hours. Overnight is totally fine too.
  5. Spoon into a serving bowl or little cups. Top with cherries or extra coconut if you want.

Notes

Serve cold straight from the fridge. If it sits out for a long time, it will soften, so keep it in a cooler or set the bowl over ice in hot weather. Adjust coconut to your taste, and consider sprinkling toasted coconut on top before serving for added crunch and aroma.
