Ingredients

Basic Ingredients
  • 1 cup self raising flour or all purpose flour plus 2 teaspoons baking powder Self raising flour simplifies the recipe.
  • 2 tablespoons sugar Reduce to 1 tablespoon for less sweetness.
  • 1 large egg
  • 3/4 cup milk Add a splash more if needed.
  • 1 teaspoon vanilla extract Optional but recommended for flavor.
  • 1 pinch salt
  • to taste butter or neutral oil For greasing the pan.

Method

Preparation
  1. In a medium bowl, stir together the flour, sugar, and salt.
  2. Crack in the egg, pour in the milk, and add vanilla if using. Stir until just combined; a few lumps are okay.
Cooking
  1. Heat a nonstick pan or skillet on medium heat. Add a tiny bit of butter or oil.
  2. Drop batter in small rounds, about 1 to 2 tablespoons each, leaving space for flipping.
  3. When bubbles appear on the surface and the edges look set, flip the pikelets. Cook for another minute or so until golden.
  4. Stack pikelets on a plate and cover loosely with a towel to keep warm.

Notes

Keep the heat at medium to ensure pikelets are cooked through without burning. You can personalize pikelets with banana, blueberries, chocolate chips, lemon zest, or cinnamon.
