Preparation
- Start by spreading butter on one side of each slice of bread.
- Lay one slice butter-side down in a hot pan.
- Layer on mozzarella cheese and cheddar cheese, followed by a generous spread of pesto.
- Top with the second slice of bread, butter-side up.
Cooking
- Grill the sandwich over medium heat, pressing down lightly to ensure even cooking.
- Cook until the bread is golden-brown, about 3-5 minutes on one side.
- Carefully flip and grill the other side for another 3-5 minutes until golden-brown and the cheeses are melted.
- Allow to cool slightly before slicing to keep the cheese from spilling.
Notes
Add other ingredients as desired, like a side of potato chips or marinara for dipping. Store-bought pesto is fine, but fresh is recommended.
